Orange Salad with Olives and Red Onion

Ingredients

2 oranges / 1 red onion / green big olives 200g / 25g roasted and shelled sunflower seeds / 120 g mixed lettuce, spinach and red sap / Salt / 4 tablespoons of extra virgin olive oil / 2 tablespoons balsamic vinegar / 1 tablespoon orange juice

Preparation

Start peeling oranges, cut them into sections and remove all traces of white skin. Reserve a tablespoon of juice in a bowl. Put them aside. Then peel and cut into slices the red onion, and leave them few minutes while we prepare the ingredients in a bowl with cold water.
 
Wash and centrifuge the mixture and place it in a serving dish. Add the orange slices, green olives drained (from their liquid), and finally add the well dried onion slices. Sprinkle the toasted sunflower and serve with vinaigrette.
 
To make it, mix in a bowl with a dipstick oil, balsamic vinegar, salt, pepper and orange
juice that has been reserved.
